Specialities of the Corsica table.

Rissoles with the brocciu

For 6 people

Ingredients:

250 G of flour
50 butter gr.
1 eggs
1 brewers' yeast sachet
1 lemon
1 bush of 500 gr.
100 sugar gr.
1 oil bath of crackling


TIME OF COOKING: 20 min

Preparation:

To put the flour in a salad bowl. To add yeast, egg, the melted butter and milk. To mix well to obtain a ball of paste. To reserve. To crush the bush with the fork. To add 50 sugar gr. and to mix well. To reserve. To spread out the paste with the rolling pin. To cut out rectangles of four centimetres out of three. On each rectangle of paste, to pose a spoon with coffee of crushed and sweetened bush. To fold up the paste to form small pies. To make fry rissoles 2 to 3 minutes in a quite hot bath of crackling. To powder with sugar and to be useful tepid.
