Corsican macaroons

Ingredients:

500 G of sugar,
500 G of bitter almonds of which some,
3 egg whites.

Preparation:

Prune and crush almonds in a pot, add sugar little by little. Do not start to add the white, beaten snows about it very firm, that when the almonds are well mixed with sugar and only a little at the same time. Deposit the paste in small heaps on paper sheets, powder with sugar and to cook with moderate furnace. Supervise cooking.
