Zucchini fritters
For 6 people
Ingredients:
1 kg of zucchinis
200 G of flour
2 spoons with olive oil soup
1 water glass
2 eggs
salt, pepper
TIME OF COOKING: 3 min by fritter
Preparation:
To grate zucchinis (to use the same grid as for grated carrots). To put in a strainer and to salt them. To let drain during one hour. To put the flour in a salad bowl. To add a salt pinch, olive oil and egg yolks. To incorporate tepid water and to water gently until obtaining a smooth paste. To let rest 1 hour. To beat the white in snow and to carefully add them to the paste. To put zucchinis grated in the paste at fritters. To mix. To take a spoon with soup of this preparation and to slip it into the fritteuse one. To make fry fritters 2 to 3 minutes in the retournat. To drain on an absorbing paper and to serve them.
